each day offers ways you can get involved.

today:

– visit a local store to learn about the recycling products available.

– begin a compost site for your yard waste.

i’ve taken the vegetarian plunge

as i mentioned a while back, this week (sunday-saturday… can’t mess with father’s day) i’m going vegetarian. so on saturday night, i went out with a bang and ate a great honey-rosemary filet mignon from granite city.

nothing like going veggie to make sure you have your meals planned and your grocery list planned out! i thought that part was going to be more challenging, but i actually found a fair amount of options in my recipe box: fish tacos, tuna salad, salmon steaks, for example. of course, can’t go wrong with fish sticks or peanut butter sandwiches.

on sunday, for lunch i made gingerbread pancakes with morningstar “sausage” links and grapes. the kids loved the links, my husband grimaced and i thought they were ok. the flavor and texture were fine, but i missed the greasy goodness somehow.

for supper, i made soy-glazed salmon steaks (faster than the recipe i wanted to make; besides, it was too rainy to grill) with fries and pineapple.

i’ll be eating salmon for leftovers because i also made boca burgers but didn’t realize the darn things had cheese in them. grrr. i hate cheese. but my older daughter loved her patty.
